Avocado toast spends its days being photographed at brunch, but its true self comes out at night — no garnish, no flaky salt ceremony, just a ripe avocado mashed straight onto hot toast with something acidic and something hot. If there's an avocado in the house at the exact moment of ripeness at midnight, that is not a coincidence, that is a calling.

You’ll need

  • Avocado
    1 ripe
  • Bread
    1–2 slices
  • Hot sauce
    to taste
  • Lemon or lime

  • Eggs optional
    1, fried, on top
  • Tomato optional
    sliced, underneath the avocado

The way through

  1. Toast the bread dark enough to hold a wet topping without going soggy.
  2. Halve the avocado, pit it (spoon around the pit — no knife-whacking heroics at this hour), and mash the flesh straight onto the toast with a fork.
  3. Squeeze lemon or lime over it, salt it properly — avocado without enough salt tastes like nothing, this is the whole game.
  4. Hot sauce over the top. A fried egg on top turns it into a full meal, if the stove is an option tonight.
