The mug cake is the crown jewel of midnight cooking: real cake, one mug, ninety seconds of cooking, no evidence by morning. The recipe is strict about one thing only — stop the microwave while the top still looks the tiniest bit wet. Overcooked mug cake is a rubber eraser. Undercooked mug cake is molten pudding cake, which is to say: aim low.

Salt, pepper, oil, and water are assumed — if the salt is missing too, we can’t help tonight.
The way through
- In your largest mug, melt the butter in the microwave (about 20 seconds).
- Add 4 tablespoons flour, 3 tablespoons sugar, 2 tablespoons cocoa, and a small pinch of salt. Stir with a fork before adding liquid — dry-mixing first prevents cocoa boulders.
- Add 3 tablespoons of milk and stir until it's a smooth, thick batter. Scrape the fork on the mug's bottom corners; that's where flour hides.
- Drop in a few chocolate chips if you have them. Do not stir them in — they sink to the middle and become a molten core.
- Microwave 60–70 seconds. The top should look set but still slightly glossy in the center. When in doubt, stop early — you can add ten seconds, you cannot subtract them.
- Wait one minute (it finishes cooking in the mug), then eat with a spoon straight from it.
Night-kitchen noteNo cocoa? Skip it, add an extra spoon of flour and a drop of vanilla if it exists — you get a warm sugar cookie in a mug instead. Different animal, equally valid.
