Food After Hours

The Midnight Parfait

Yogurt, honey, and whatever fruit exists, layered in a glass so it feels like room service.

Sometimes late-night hunger is real but small, and the correct answer is cold, fresh, and slightly fancy-feeling rather than hot and heavy. Yogurt with honey is already good; layered in a glass with banana or jam and a scatter of oats for crunch, it becomes the kind of thing hotels charge fourteen dollars for. Zero heat, zero noise, one spoon.

You’ll need

  • Honey or maple syrup
a good drizzle No honey or maple syrup? Jam alone can carry the sweetness instead.
  • Yogurt
    a cup or so
  • Apple optional
    diced small
  • Banana optional
    sliced into the layers
  • Cinnamon optional
    a dust
  • Jam or jelly optional
    thin layers
  • Oats optional
a small dry handful on top

Salt, pepper, oil, and water are assumed — if the salt is missing too, we can’t help tonight.

The way through

  1. Find a glass — a real glass, not a bowl. The layers are the whole point of the experience.
  2. Spoon in a layer of yogurt, then a thin layer of jam or some banana slices, then a drizzle of honey.
  3. Repeat until the glass is full. Finish with fruit on top.
  4. Scatter a small handful of dry oats over the top for crunch, plus cinnamon if you like.
  5. Eat slowly with the longest spoon you own.
Night-kitchen noteDry oats straight from the container are surprisingly good on yogurt — they soften just slightly against it. If that's a step too far, crushed crackers are honorary granola.
