Microwave nachos have a bad reputation because people pile chips into a mountain and get one bite of molten summit above a valley of dry, cold chips. Spread one flat layer on a plate so every chip gets its share, and the microwave becomes a legitimate nacho appliance: forty-five seconds to fully melted, completely silent, one plate to wash.
You’ll need
-
Cheese (any melty kind)
an even scatter -
Tortilla chips
one plate's worth, single layer -
Avocado
optional
half, in pieces -
Canned beans
optional
a few spoonfuls, drained -
Hot sauce
optional
to taste -
Salsa
optional
small dollops, after melting -
Sour cream
optional
small dollops
Salt, pepper, oil, and water are assumed — if the salt is missing too, we can’t help tonight.
The way through
- Spread chips across a plate in a single flat layer. Chips may touch. They may not stack. This is the entire recipe.
- Scatter cheese evenly — shredded is ideal, torn slices work fine. A few spoonfuls of beans dotted around if you have them.
- Microwave 45–60 seconds, until the cheese is fully slumped. It goes from melted to weirdly crispy fast, so watch it.
- Salsa and sour cream go on after, in small dollops, not floods — wet nachos die quickly. Avocado and hot sauce as available.
Night-kitchen noteRound two takes ninety seconds total and uses the same plate. Everyone makes a second plate. Plan for it emotionally.
