There is a specific hour when only an egg sandwich will do, and it is usually not a reasonable hour. The trick to making one without waking the house is heat discipline: a low flame fries an egg almost silently. High heat is what makes eggs hiss, spit, and smoke. Go low, go slow — it's three extra minutes, and it's a better egg anyway.

The way through
- Melt a little butter in a pan over low heat. Actually low.
- Crack in the egg. At low heat it will set gently without sputtering. Salt it.
- While it cooks, get your bread out. Toast it if you want, or leave it soft — soft bread is quieter and honestly correct for this sandwich.
- When the white is set but the yolk still has some give (about 3–4 minutes), decide your fate: flip for over-medium, or leave it sunny and accept yolk on your hands.
- Optional but recommended: lay a slice of cheese on the egg for the last minute so it softens.
- Mayo on the bread, egg on the mayo, hot sauce on the egg. Close it, cut it, done.
Night-kitchen noteBreak the yolk on purpose and cook it through if you're eating this in bed. This is hard-won knowledge.
